Our Cuvée A Rubies Dessert Wine is an elegant expression of a non-vintage fortified wine. Intensely aromatic and flavorful with everything a wine needs for lengthy aging.

Cuvée A Rubies Tasting Notes:

Vinification

Grapes were hand-picked and brought directly to the winery in 1/2 ton totes in perfect condition. They were meticulously hand sorted on a shaker table then destemmed into 2-ton open top, stainless steel fermenters. The fermentation was arrested by fortification with a brandy of Pinot noir. The wine was then racked into a mixture of new and used  60 gallon French oak barrels. The best barrels of fortified merlot and fortified syrah, from various vintages, were blended to create this dessert wine.

boysenberries & marionberries picked at the peak of ripeness, clove, nutmeg, vanilla
